THE HISTORY OF SORGHUM VINEGAR AND TZU
In China, sorghum is known as “Kaoliang” and is one of the earliest cultivated crops. Sorghum kernels can make strong liquors such as “Maotai” and “Fen” as well as starch, starch noodles and vinegar.
Vinegar, with its tangy flavour, can whet the appetite, aid digestion or assist medicine. Also known as Chinese Black Vinegar, Sorghum vinegar is used traditionally in cooking. If well aged it has a bitter flavour and it is warm in nature. Sorghum vinegar is used in traditional Chinese folk medicine to dissipate blood stasis, stop bleeding and destroy intestinal parasites.
Vinegar in general yields refreshing action with vapour inhalation and can also be used to remove any poisonous quality of fish, meat and vegetables.
